Quick & Easy Fried Rice

Fried rice is a dish that originated in ancient China, probably as a way to use leftovers.  Today fried rice is a staple on every menu featuring Asian cuisine. This recipe features traditional fried rice ingredients all cooked in a single pan. You can also make this with other vegetables like broccoli, fresh green beans or bell peppers. The best rice to use is jasmine or long grain rice but any rice will work - just make sure it's been cooled so it won't get mushy in the cooking process.  You can also add meat to your dish liked chopped chicken, ham, or even bacon.

Prep time: 10 minutes (but cook rice the night before for best results)

Cook time: 15-20 minutes

Servings: 4-6

Ingredients

  • 2 cloves minced garlic or 1/4 tsp garlic powder

  • 1 tsp grated fresh ginger or 1/8 tsp ground ginger

  • 1 carrot diced or 1/2 cup frozen carrots

  • 1 small white onion, diced

  • 2 large eggs, beaten

  • 1 cup frozen peas

  • 3 cups cooked rice - it's best to use rice that has been cooled in the refrigerator

  • 1 Tbsp Toasted sesame oil - can substitute canola oil

  • Soy sauce to taste

Directions

It's best to have all your ingredients chopped, sliced and measured before you start cooking. This does cook quickly once you get started.Preheat skillet to medium high and pour the sesame (or canola) oil in the pan. Add the onions, peas, and carrots. Fry this mixture until tender.Move the vegetable mixture to the side of your pan and pour the beaten eggs onto the other side. Use a spatula to scramble the eggs then mix with the vegetables.Add the rice to the vegetable and eggs in the pan and fold together until thoroughly mixed. Pour soy sauce on top and stir until it's completely heated.That's it! You're ready to serve and enjoy!
