Easy Peasy Pita Pizza

It’s hard to find someone who doesn’t like pizza. And everyone has a favorite topping, whether it’s cheese, meat or vegetables. While it’s easy just to order a pizza and pick it up, or have it delivered, it’s more satisfying and nutritious, not to mention cheaper, when you make it yourself. Plus, by making your own, you can choose to make it as healthy as you want, as you have control over all of the ingredients. One of the fun foods that came out of the '90s was a pizza quick sauce that could turn just about any bread into a pizza.   Here’s a variation that is a quick, fun way to make a family pizza night and bring everyone to the table to make their own favorite.  This recipe makes 6 pita pizzas and costs between $15 and $18 to make depending on the ingredients you choose.

  • Prep time: about 10 minutes

  • Baking time: about 8 minutes

Ingredients:

Base

  • Whole wheat pita bread (or English muffins, or French bread)

  • Olive oil (optional)

  • 1 jar pizza sauce (or tomato sauce)

Toppings - just about anything you want.

  • Mozzarella cheese, shredded (or cheddar cheese if you prefer)

  • Pepperoni

  • Diced green pepper

  • Mushrooms sliced (can use canned mushrooms, drained)

  • Diced yellow or red onion

Instructions:

Preheat the oven to 350°F. The secret to getting a good personal pizza at home is not letting the sauce seep into the bread and make it soggy.  The way to prevent this is to lightly toast the pita first, then place the toasted pita on a baking sheet. If you have olive oil, lightly brush the top of the pita with the oil after toasting. Then add your sauce.  Once the pita has sauce, add your toppings.  The great thing about making these with the family is that each person can have a pizza made just the way they like it. There are no rules when it comes to pizza, so use your imagination and have fun. After all, we should enjoy eating well!After adding the toppings, place the baking sheet with the pita pizza into the oven for about 8 minutes or until the cheese is melted.  Let cool for a couple of minutes before serving. Serve pizza with salad, carrots, or celery.
