Wrap it up

Spring is here and summer is on the way.  Having a light, easy meal to feed your family will soon be top of mind.  Lettuce wraps are a healthy way to change things up.  You can exchange lettuce for tortillas to create taco wraps.  Instead of a bun or bread, try lettuce as your container for hamburgers, sloppy joes, and more. This recipe is a unique spin on Waldorf Salad that will make a fast, affordable meal, and the addition of peanut butter will give it an exotic, Thai-inspired taste. It's sure to become a family favorite.

Makes 4 wraps

Prep time: 15 min.

Ingredients

  • ½ cup cooked chicken breast, chopped into bite-size pieces or substitute canned chicken well drained

  • 2 Tbsp smooth peanut butter; choose the crunchy variety if you prefer more crunch

  • 1/3 cup fresh apple, chopped (about one apple)

  • 1/4 cup red or black grapes cut in half or smaller

  • 1 Tbsp lite mayonnaise

  • 2 tsp honey

  • 4 large lettuce leaves separated - iceberg or Romaine

Directions

Combine peanut butter, mayonnaise, and honey until well blended.  Chop chicken meat and fruit, mix in bowl.  Fold the peanut butter mixture into the chicken mixture until evenly coated.   Spoon into open lettuce leaf, roll, and serve.
