Baked Oatmeal Bars

Oatmeal is a traditional breakfast food but it doesn't have a great reputation when it comes to flavor.   Baked oatmeal has more flavor and can be made with staples you've got at home.  You can also make these ahead of time and refrigerate or freeze until ready to use, then just reheat and serve for a super quick breakfast.  Easier to make than oatmeal cookies and better for you!

Prep time: 20 minutes (or overnight and 20 minutes)

Cook time: 30 minutes

Ingredients

  • 1 cup milk

  • 2 cups oats (rolled or instant - both work fine)

  • 1/4 cup syrup or honey

  • 2 tbsp applesauce

  • 2 eggs

  • 1 1/2 tsp baking powder

  • 1 1/2 tsp vanilla extract

  • 1/2 tsp salt

Instructions

For best results, soak the oats in the milk overnight. Put a lid on the container or cover tightly. Put in the refrigerator overnight.  When the oats are soaked overnight they absorb the liquid and become soft which makes your oatmeal bars less chewy and more moist.This step can be skipped if you are in a hurry.

To make the oatmeal bars:

Preheat the oven to 350. Grease an 8" x 8" baking dish.

Combine the syrup (or honey), applesauce, eggs, baking powder, vanilla, and salt in a bowl until well mixed. Add the syrup mixture to the oats mixture, and fold the ingredients together. Pour this mixture into the baking pan and put in the oven for 30 minutes.

Remove from the oven and let cool. Top with butter, syrup, or yogurt. Refrigerate or freeze the leftovers.  When you're ready, preheat the oven to 350, cover the oatmeal bars with foil and leave them in the oven for 20 minutes or until warm.  You can also reheat individual portions in the microwave for 1 minute.  Once they are warm, add your favorite toppings and enjoy!
